Bread with chickpeas & avocado

Bread with chickpeas and avocado – a special treat! Is the basic avocado toast too boring for you? Then we have a great recipe that will bring your kitchen back to life! Chickpeas and avocado are simply a brilliant combination that you have to try!
Ingredients:
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, mashed
  • 1 tin of diced tomatoes
  • 1 tablespoon dried Italian seasoning
  • A little chilli flakes
  • Sea salt
  • 2 tins of chickpeas, drain and rinse
  • 4-5 full tablespoons of vegetarian ricotta cheese
  • A handful of parsley
  • slices of bread + avocado
Preparation:
Heat the oven to 180 °C.
Heat the olive oil in a large frying pan over medium heat. Add the onion and garlic and roast for about 5 minutes, stirring frequently. Add the canned tomatoes, Italian seasoning mix, chilli flakes and salt.
Reduce the heat and stir frequently until a thick sauce has formed, about 10 minutes.
When the sauce is ready, add the washed and dried chickpeas. Put everything in a baking dish and bake in the preheated oven for about 25 minutes. Then add the ricotta and put back in the oven for another 5 minutes to bake everything thoroughly.
Take a piece of bread, put a nice layer of chickpea spread on it, cut the avocado and put it on the bread as well. Sprinkle with sea salt, black pepper, primrose and chilli powder and enjoy!
